Eat Local: Cocina DeLeon

It's almost time for the 2013 Milwaukee Eat Local Resource Fair, and we're getting excited. So, we've decided to feature some of the vendors who will be present at the fair.


Did you know that Milwaukee had a local enchilada company?  Well, we do!

Cucina DeLeon is a company owned by Linda Hanschman Mulholland that creates prepared enchiladas and Mexican specialties, which they sell out of a store front in Galleria West in Brookfield.

Each enchilada from Cocina DeLeon is handrolled and filled with deliciously natural ingredients. 

"We cook for our customers just like we cook for our family and friends," Mulholland says. "Con Carino - with care and love."

The sauce starts with red chile paste made from de-seeded guajillo and ancho chiles. Then they add tomatoes, fresh garlic, onions and peppers. The result is a layered and complex sauce that is full of flavor and depth.

Cocina DeLeon's enchilada sauce is so good, it's been called "addictive."


Their full line of products include thirteen varieties of enchiladas including:
  • Their famous "Manchilada" with grilled ribeye, blue cheese, and onion
  • Spinach and black bean
  • Wisconsin enchiladas made with Nueske's bacon
Weekly takeaway specials include:
  • Garlic chipotle shrimp tacos
  • Mexican beef stew
  • Tortilla soup
  • Mexican Caesar salad with avocado/tequila/lime dressing
  • Dulce de leche flan
  • Mexican chocolate cookies
